🥘 Pav Bhaji Recipe using Appan Kitchen Pav Bhaji Masala

🧂 Ingredients
For the Bhaji (vegetable mash):
- 2 tbsp butter (plus more for serving)
- 1 tbsp oil
- 1 onion (finely chopped)
- 1 green chili (optional, finely chopped)
- 1 tsp ginger-garlic paste
- 2 tomatoes (finely chopped or pureed)
- 2 medium potatoes (boiled & mashed)
- 1 cup cauliflower florets (boiled & mashed)
- ½ cup green peas (boiled)
- 1 capsicum (finely chopped)
- Salt to taste
- 1 ½ to 2 tbsp Appan Kitchen Pav Bhaji Masala
- ½ tsp turmeric (optional)
- ½ tsp red chili powder (adjust to taste)
- Water as needed (to adjust consistency)
- Fresh coriander (for garnish)
- Juice of ½ lemon
For the Pav (bread rolls):
- 8 pav buns
- Butter for toasting
- A pinch of Appan Kitchen Pav Bhaji Masala (optional, for buttery spice toast)
👨🍳 Instructions
1. Cook the Vegetables
- Boil potatoes, cauliflower, and green peas until soft.
- Mash them together and set aside.
2. Make the Bhaji
- Heat butter and oil in a large pan.
- Add chopped onions and sauté until golden.
- Add ginger-garlic paste and green chili; sauté for a minute.
- Add tomatoes and cook until soft and mushy.
- Add capsicum and cook for another 3–4 minutes.
- Now add mashed veggies, turmeric, red chili powder, and Appan Kitchen Pav Bhaji Masala.
- Mix everything well and mash further using a masher for a smooth consistency.
- Add water gradually to get the desired thick, gravy-like texture.
- Simmer on low heat for 8–10 minutes, stirring occasionally.
- Finish with lemon juice, butter, and chopped coriander.
3. Toast the Pav
- Slice pav buns in half.
- Heat butter on a pan, sprinkle a pinch of Appan Kitchen Pav Bhaji Masala, and toast buns until golden and slightly crisp.

Serve the hot bhaji with buttered pav, chopped onions, a lemon wedge, and a dollop of butter on top
