🍛 Chicken Biryani Recipe with Appan Biryani Masala

🧂 Ingredients

For the Rice:

  • 2 cups Basmati rice (long grain)
  • 1 bay leaf
  • 2–3 cloves
  • 1 cinnamon stick
  • 1 tsp salt
  • Water for boiling

For the Chicken Marinade:

  • 500g chicken (bone-in or boneless, cut into medium pieces)
  • 1 cup yogurt
  • 2 tbsp Appan Biryani Masala
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • ½ tsp turmeric
  • Juice of ½ lemon

For the Biryani Base:

  • 2 onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 2–3 tbsp oil or ghee
  • Fresh coriander leaves (chopped)
  • Mint leaves (chopped)
  • Optional: saffron soaked in warm milk or food-grade biryani color

👨‍🍳 Instructions

1. Cook the Rice

  • Rinse the basmati rice 2–3 times and soak for 20–30 minutes.
  • Boil water with bay leaf, cloves, cinnamon, and salt.
  • Cook the rice until it’s 70–80% done (grains should still be firm), then drain and set aside.

2. Marinate the Chicken

  • Mix chicken with yogurt, Appan Biryani Masala, ginger-garlic paste, turmeric, lemon juice, and salt.
  • Let it marinate for at least 30 minutes (or overnight for deeper flavor).

3. Prepare the Biryani Base

  • Heat oil or ghee in a deep pan or biryani pot.
  • Fry sliced onions until golden brown. Set half aside for garnishing.
  • Add tomatoes and cook until soft.
  • Add the marinated chicken and cook on medium heat until chicken is almost cooked and the oil separates.

4. Layer the Biryani

  • In the same pot (or another heavy-bottomed one), layer half the rice over the chicken.
  • Sprinkle some mint, coriander, and fried onions.
  • Add the remaining rice and top with more herbs and fried onions.
  • Optional: drizzle saffron milk or food color on top for rich color and aroma.

5. Dum (Steam) Cooking

  • Cover the pot tightly with a lid (use dough to seal if needed).
  • Cook on low flame for 15–20 minutes.
  • Turn off the heat and let it rest for 10 minutes before opening.
